This summer a few of my friends and my online community participated in a 5-Day Summer Salad Challenge. Although this salad was for our summer salad challenge, it stays in my rotation year-round. When you try it, I think you’ll see why.

ingredients

  • Romaine Lettuce, chopped

  • Red Cabbage, chopped

  • Carrots, shredded

  • Green Onions, chopped

  • White Onion, thinly sliced

  • Chopped Walnuts

  • Mandarin Oranges, peeled and separated

  • Chopped Cilantro

  • Pinch of Dried Basil

  • Chopped Mint

  • Optional (Chickpeas or Snowpeas)

ginger sesame dressing ingredients

  • 3 ½ tablespoons Rice vinegar

  • 2 tablespoons Low-sodium soy sauce

  • 1 ½ tablespoons Sesame oil

  • 1 tablespoon Raw Honey or Agave Nectar

  • ½ tablespoons Fresh ginger, minced

  • 1 Garlic clove, minced

  • 1 tablespoon Sesame seeds

  • 1 half lime juice, freshly squeezed

  • 1/4 cup Creamy Peanut Butter

  • 1/4 teaspoon Red Pepper Flakes

instructions

wash and cleanse all ingredients and combine together in a mixing bowl.

ginger sesame dressing instructions

In a small bowl, whisk together peanut butter, rice vinegar, soy sauce, honey, lime juice, ginger, sesame oil, garlic, and red pepper flakes. If the dressing is too thick, thin with water, 1 teaspoon at a time.
