chopped asian salad with ginger sesame dressing
This summer a few of my friends and my online community participated in a 5-Day Summer Salad Challenge. Although this salad was for our summer salad challenge, it stays in my rotation year-round. When you try it, I think you’ll see why.

ingredients
Romaine Lettuce, chopped
Red Cabbage, chopped
Carrots, shredded
Green Onions, chopped
White Onion, thinly sliced
Chopped Walnuts
Mandarin Oranges, peeled and separated
Chopped Cilantro
Pinch of Dried Basil
Chopped Mint
Optional (Chickpeas or Snowpeas)
ginger sesame dressing ingredients
3 ½ tablespoons Rice vinegar
2 tablespoons Low-sodium soy sauce
1 ½ tablespoons Sesame oil
1 tablespoon Raw Honey or Agave Nectar
½ tablespoons Fresh ginger, minced
1 Garlic clove, minced
1 tablespoon Sesame seeds
1 half lime juice, freshly squeezed
1/4 cup Creamy Peanut Butter
1/4 teaspoon Red Pepper Flakes
instructions
wash and cleanse all ingredients and combine together in a mixing bowl.
ginger sesame dressing instructions
In a small bowl, whisk together peanut butter, rice vinegar, soy sauce, honey, lime juice, ginger, sesame oil, garlic, and red pepper flakes. If the dressing is too thick, thin with water, 1 teaspoon at a time.
