This summer a few of my friends and my online community participated in a 5-Day Summer Salad Challenge. Although this salad was for our summer salad challenge, it stays in my rotation year-round. When you try it, I think you’ll see why.

ingredients

  • Olive or Avocado Oil

  • Fresh Corn

  • 2 Zucchini & 2 Squash

  • White Onion Sliced

  • Minced Garlic

  • Black Pepper & Sea Salt

  • Chopped cilantro

  • Bell Peppers

  • Arugula

instructions

  • Slice Zucchini and squash, brush with Olive or Avocado Oil, and Season with a pinch of Sea Salt and Black Pepper. Char on a high-heat cast iron skillet or grill. Set aside

  • Thinly slice Onions and bell Peppers and sear in a cast iron skillet with garlic. Set aside

  • Brush Corn with Oil, Season with Black Pepper and Sea Salt, Char in a cast iron skillet then cut off the cob

  • Combine all cooked vegetables together and toss in Arugula
